Amylalkohol
Amylalkohol ( Pentylalkohol, Amyloxydhydrat ) C 5 H 12 O, Alkohol aus der Fettsäurereihe, von dem 8 Isomere möglich sind. Gewöhnlich versteht man unter A. den Gärungsamylalkohol , den Hauptbestandteil des Kartoffelfuselöls, der aus Isobutylkarbinol (CH 3 ) 2 . CH. CH 2 . CH 2 . OH mit wenig aktivem A. (Methyläthylkarbinkarbinol C 2 H 5 . CH(CH 3 ). CH 2 OH) besteht. Gärungsamylalkohol findet sich auch in andern Fuselölen, bildet sich aber am reichlichsten bei der Gärung der Kartoffelmalsche.
